  • 2 eggs at room temperature
  • 250g plain flour, sifted
  • 300ml lukewarm milk
  • 15g sugar
  • 5g salt
  • 60 g melted butter
  • 15ml oil
  • 15g fresh yeast or 5g dried yeast

    Method

    • step 1

      Melt the butter in the microwave.
    • step 2

      Warm the milk very lightly not to kill the yeast (20°C). Mix the yeast with the milk and stir to dissolve it.
    • step 3

      Separate the whites from the yolks. In a large bowl, mix the sifted flour, warm milk and yeast, oil, salt, sugar and egg yolks and mix with a fork. When it is smooth, add the lukewarm butter.
    • step 4

      Cover the bowl with plastic wrap and wait for 2 hours or for the volume of the dough to double.
    • step 5

      While your pan heats, beat the egg whites. The egg whites are at room temperature. The pan needs to be extremely hot. After that, decrease the hob to medium heat.
    • step 6

      Carefully incorporate the egg whites to the batter. Try to keep a maximum of air in.
    • step 7

      Grease the pan with butter or oil and form a small pancake. It needs to cook 3 to 4 minute on each side Bonne dégustation!!
