  • 50g Dark chocolate

  • 2 lemons zested and juiced
  • 1 egg
  • 40g caster sugar

    Method

    • step 1

      First put the digestives in cupcake cases
    • step 2

      Heat the oven to 180C. In the blender put 100g cream cheese, 50g dark chocolate and 40g sugar. Blend until smooth. Add the egg and blend some more. Now pour the mixture until the cases are about a third full. Put it in the oven while you do the next layer so they don't merge.

      In the bledner put 100g cream cheese, 50g berries and 40g sugar. Blend. Now add the egg and blend some more. Get the cheesecakes out the oven a pour on the next layer. Put it back in the oven.
    • step 4

      Get the zest of the two lemons. Then squeeze the juice out. Pour that inot the bledner. Add 100g cream cheese and 40g sugar. Blend. Add the egg and blend again. Get the cheesecakes out of the oven and add the lemon layer.
    • step 5

      Bake for 20 minutes or until slightly risen and beginning to crack. Leave to cool, then put in the fridge for at least an hour.
