  • 350g new potatoes
  • 1 tbsp fresh mint, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp olive oil
  • salt and freshly ground black pepper

    Method

    • step 1

      Wash and scrub the potatoes and then boil in their skins until render.
    • step 2

      Drain and slightly crush the potatoes with a fork in the pan.
    • step 3

      Add the chopped herbs, oil and seasoning and mix well.
