- 350g new potatoes
- 1 tbsp fresh mint, chopped
- 1 tbsp fresh chives, chopped
- 2 tbsp olive oil
- salt and freshly ground black pepper
Method

Wash and scrub the potatoes and then boil in their skins until render.step 2
Drain and slightly crush the potatoes with a fork in the pan.step 3
Add the chopped herbs, oil and seasoning and mix well.
