Simple Crushed Potatoes

- Serves 2
- 350g new potatoes
- 1 tbsp fresh mint, chopped
- 1 tbsp fresh chives, chopped
- 2 tbsp olive oil
- salt and freshly ground black pepper
- STEP 1Wash and scrub the potatoes and then boil in their skins until render.
- STEP 2Drain and slightly crush the potatoes with a fork in the pan.
- STEP 3Add the chopped herbs, oil and seasoning and mix well.
