
Slow cooker gammon
Use a slow cooker for your Christmas gammon this year. Marinaded in ginger beer and apple juice, and glazed in maple syrup and mustard, it's full of sweet and spiced flavours
- 1.5kg gammon
- 750ml ginger beer
- 1-1.5 litres apple juice
- 1 onionquartered
- 1 carrotroughly chopped
- ½ tsp white peppercorns
- ¼ tsp ground cloves
- ½ tsp ground allspice
- 1 cinnamon stick
- 2 bay leaves
- roast potatoesand wilted greens, to serve (optional)
For the glaze
- 60g light brown soft sugar
- 3 tbsp maple syrup
- 1½ tbsp Dijon mustard
- 1 tbsp red wine vinegar

Method
step 1
Put the gammon in your slow cooker, then pour over the ginger beer and enough apple juice to cover. Add the veg, spices and bay, then cook on low for 6 hrs.

Remove the gammon, discarding the liquid, and put in a roasting tin. Heat the oven to 200C/180C fan/gas 4. Remove any skin but leave behind an even layer of fat, and score it all over in a criss-cross pattern.

Combine the glaze ingredients in a small bowl or jug, then brush it all over the gammon. Roast for 10 mins, then pour over any remaining glaze and roast for a further 20 mins. Serve with roast potatoes and wilted greens, if you like.
