  • 150g light brown soft sugar
  • 3 large eggs
  • ½ tsp vanilla extract
  • 50g plain flour
  • single cream, to serve


  1. Heat oven to 200C/180C fan/gas 6. Butter 6 dariole moulds or basins well and place on a baking tray.

  2. Put 100g butter and 100g chopped dark chocolate in a heatproof bowl and set over a pan of hot water (or alternatively put in the microwave and melt in 30 second bursts on a low setting) and stir until smooth. Set aside to cool slightly for 15 mins.

  3. Using an electric hand whisk, mix in 150g light brown soft sugar, then 3 large eggs, one at a time, followed by ½ tsp vanilla extract and finally 50g plain flour. Divide the mixture among the darioles or basins.

  4. You can now either put the mixture in the fridge, or freezer until you're ready to bake them. Can be cooked straight from frozen for 16 mins, or bake now for 10-12 mins until the tops are firm to the touch but the middles still feel squidgy.

  5. Carefully run a knife around the edge of each pudding, then turn out onto serving plates and serve with single cream.

This has become a family hit! Absolutely delicious. Since I don't have ramekins, I use my muffin tin to bake these beauties and can make 8 of them with this recipe. I cook them for about 4 mins 45-50 seconds to get the perfect oozy centre. Works like a charm each time.

Really enjoyed. Mine stuck a bit so tricky to get out in 1 piece. Would do again.

Made this and substituted the sugar with stevia. Turned out quite good but next time i would use semi sweet choc to balance with the stevia.

Followed the recipe and it was delicious. Very simple. Baked one ramekin for 12 mins and the second for 14 mins and I think the molten cakes are better cooked for 15 mins so you can get a decent cooked layer and the right consistency for the gooey inside. Tempted to add some form of alcohol, it's that good!

Very simple and yummy. Didn't have any ramekins so I used silicone cupcake forms. As I am a total disaster in the kitchen as a precaution I've put a piece of chocolate inside, worked nicely!

Tried this as a last minute pudding, delicious and so easy to make! Halved the recipe (two eggs) so it was perfect for two and it still worked really well!

I didn't have ramekins so I used mugs like another user did and they turned out so well, a longer cooking time though

Could you use the same recipe but put it in a 1 litre oven proof dish instead of 4 smaller ones? only I don;t have any basin or ramekins.
