Method

  • step 1

    Heat the oven to 200C/180C fan/gas 6. Put the milk, spices and apple in a small saucepan. Cover, gently bring to the boil and simmer for 10-12 mins. Set aside to infuse for at least 15 mins.

  • step 2

    Remove and discard the spices, then pour the apples and milk into a large bowl and roughly crush the apples with the back of a fork. Mix in the oats, egg, vanilla, baking powder, pecans and blackberries.

  • step 3

    Tip into a 2-litre ovenproof dish and bake for about 30-35 mins until piping hot in the middle. Serve with milk or yogurt and maple syrup, if you like.

I simmered the milk with the apple and it curdled and separated. Had to throw it in the bin. Back to my usual recipe where I beat the egg with the milk and stew the apples with a little water and cinnamon.

Make this frequently with a few updates to streamline: Use 1 cup applesauce instead of the chopped apple; add ground cinnamon; skip the cardamom; use whatever frozen fruit. Mix everything together right in the baking dish. Comes out wonderfully.

Good, adaptable recipe. Made with pear and strawberry. I didn't bother simmering the pear, just shredded it into the oats.

Made this today - used oat milk, didn’t heat it to proper boiling point, just barely scalded it, and used ground cinnamon because I didn’t have sticks to hand. Grated the apple as it was easier, used frozen blackberries. Next time I’d probably sprinkle a little Demerara sugar on top to give it a bit…
