For the topping

  • 200g tub soft cheese (I used Philadelphia Extra Light)
  • ½ tsp vanilla extract
  • 50g icing sugar

Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter and line a traybake tin, 23 x 23cm or thereabouts. Put the chocolate, sugar and butter in a pan, then heat very gently for about 5 mins, stirring every min until the butter and chocolate have melted. Leave to cool for 10 mins. Beat in the egg yolks, flour, vanilla and half the orange zest.

  2. Put the egg whites into a large, very clean bowl, then whisk until they stand up in peaks. Stir ¼ of the whites into the chocolate mix to loosen it, then carefully fold in the rest with a metal spoon. Pour the mix into the tin, then bake for 25 mins or until evenly risen and just firm to the touch. Cool in the tin, then cut into squares. Can be frozen for up to 1 month.

  3. Beat together the cheese, vanilla, sugar and remaining zest until smooth. Spread over each chocolate square and serve. If you’re making ahead, spread the topping over just before serving.

Mmmm! Added orange juice to the icing mix and turned out lovely! Needed 15-20 minutes to cook, not 25. Otherwise easy to make and went down well with everyone. Definitely a recipe to make again!

These brownies are amazing! I changed it slightly by using thorntons mini fudge pieces & white chocolate chunks instead of the orange zest & they turned out really gooey! These went down really well & will definitely make loads more.

It looks good, but with the "philadelphia cheese" it would "never" satisfy my European taste!

Can I make a much bigger traybake quantity, by adjusting the amounts, or won't it work in a large tray??? Any suggestions welcome, as I need to make something like this in big trays, thanks, Caroline x

Yum - easy to whip up on a Friday night ready for morning coffee on Saturday! Went down a treat and the orange was a nice change from the straight chocolate!

just a thought, alix and and alison, when you let the chocolate cool before adding in the eggs did you maybe leave it too long. you normally just let it cool abit so the eggs don't scramble when added to the hot chocolate. but if you leave too long it would start to stiffen......well it might explain the problems

I've made these brownies about ten times and everybody always raves about them. I have made some slight changes to the recipe. First of all the amount of butter is way to much so I use about 75-100 g butter, furthermore I don't add zest to the mixture and also leave out the topping (prefer mine plain or with icecream). But I do add chopped pecan nuts. Lastly I alway bake them slightly longer then recommended (about 30-35 min). Oh and it is important that the tray you use isn't to deep because then it willn't cook in the middle and become dry on the outside
