Method

  1. Cook the quinoa according to pack instructions. Meanwhile, heat 3 tbsp of the oil in a wok or large pan, then add the garlic and quickly fry for 1 min. Throw in the carrots, leeks and broccoli, then stir-fry for 2 mins until everything is glistening.

  2. Add the sundried tomatoes, mix together the stock and tomato purée, then add to the pan. Cover, then cook for 3 mins. Drain the quinoa, then toss in the remaining oil and the lemon juice. Divide between warm plates and spoon the vegetables on top.

Very quick, really easy, healthy and yummy too! Added some salt and pepper at the end and liked the combination of flavours. Nice mid-week meal. Will make this again.

I loved this - just made it now as a way of using up some veg (had broccoli and carrots and used red onion in place of the leeks) I love quinoa for summer packed lunch salads but was looking for something more 'comforting' for the winter. I was a bit dubious how tasty this would be but it was lovely: I think the sun dried tomatoes are the key and really lift the flavour (I threw in a few extra as it was the end of the jar). Chop the broccoli into tiny florets or it's a bit crunchy, even for someone who loves their veg al dente like me. This will definitely become a regular and it's a bonus it's so healthy.

Had this this evening and it was yummy! Served it with some basil-tofu cut into flat pieces and griddled. Will definitely make again!

It was very easy and practical to prepare and cook. Aesthetically pleasing. The stir-fried vegetables added a delicious taste to the quinoa. Nice combination. I would cook it again. I've added a sprinkle of cheddar cheese to give it a bit more of flavour. It was delicious. I do recommend. Thanks for this recipe.

I loved this recipe. I added some mushrooms, zucchini and chilli. Very tasty! I'll often make it, also with cous cous.
