  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.

  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

Really easy and really quick to make. I added capers, garlic, chilli, and more thyme. Left out the soy. I had it with lemony couscous. Delicious.

Really disappointing and lacking in flavour. I did as others suggested, left out the soy and added garlic and plenty of thyme, but was really bland.I also made the crispy garlic and roast potatoes as someone suggested, next time i will cook potatoes for a bit longer then grill at a higher heat as not crispy enough

Perfect healthy dinner, have made a few times now - followed a few suggestions from other comments and added garlic, chilli and some black olives. Left out the soy

Delicious mid week supper. I added a clove of garlic, half a chilli and asparagus which I pan fried once the onions had browned which gave it a bit of zing!

I followed advice and left out the soy, added garlic and olives and extra half tin of toms. Everyone enjoyed it including my 4 year old. I am a veggie so used quorn pieces...will try with tofu next time. Quick and tasty!

Not a bad recipe easy enough to make the soy sauce makes it abit bland so would recommend not using it In the sauce x

Tasty, healthy & easy. 5/5 for a midweek meal. I would add less sugar next time (maybe add to taste towards the end) and add alot more thyme.

Really really simple to make, and very tasty with a nice piece of fish. I didn't have any fresh thyme, but followed the others on the ingredient list and it was delicious. I was only making for 2 people, yet still used whole tin of tomatoes, so there was a bit of extra 'sauce', but would be nice with some crusty bread. I served with roasted wedges to dip in the excess tomato sauce.

made this the other night and froze it. now i'm wondering the best way to reheat it defrost and microwave? or boil in the bag I froze it in? please help

I used 1 tsp of soya sauce instead of 1 tablespoon, added more thyme and a tsp of mixed herbs, plus 2 cloves of garlic. Absolutely delicious.
