  • 2 salmon fillets, about 140g/5oz each
  • handful basil leaves


  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.

  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

Wow great recipe! I got it out of the oven and I felt like a professional high class chef and then I looked around the kitchen and couldn't believe how little mess there was, just a little knife - because some of my spuds were big - and a tablespoon measure. Seriously delicious.

I followed the recipe and took note of the reviews adding the finer asparagus at the same time as the tomatoes and chopping the potatoes up smaller . It was delicious and great for a dinner party as I could be with my guests most of the time will try adding samphire next time. Deliscious!

Good recipe. Make sure you do not overcook the salmon, 15 minutes tops. I found the potatoes a little hard, therefore next time I will either pre-cook them or cut them into even smaller bits.

A great, easy recipe. Jazzed it up a bit with some spices and cayenne in the potatoes, then cooked the tomatoes, salmon and asparagus all at the same time. Delicious!

Great easy recipe. I cooked the asparagus for 7 minutes though before adding tomatoes as it seemed way too long to roast them.

Perfect simple dinner. I used frozen salmon fillets and put them in the oven a bit earlier than the recipe said. Lovely!

Sooooooooooo good! Easiest meal ever and even good enough to serve to guests! Used about 2 tbsps of balsamic vinegar. Served with garlic bread to mop up the juices. This will be my new go to weeknight dinner
