  • 500ml turkey or vegetable stock
  • 1 tsp sugar, any type, or more to taste

Method

  1. Heat the butter or oil in a large pan, then add the garlic and soften for a few mins over a low heat. Add the sun-dried or SunBlush tomatoes, canned tomatoes, stock, sugar and seasoning, then bring to a simmer. Let the soup bubble for 10 mins until the tomatoes have broken down a little.

  2. Whizz with a stick blender, adding half the pot of soured cream as you go. Taste and adjust the seasoning – add more sugar if you need to. Serve in bowls with 1 tbsp or so of the pesto swirled on top, a little more soured cream and scatter with basil leaves.

YUM! Substituted some real tomatoes in place of one of the tins, and it worked brilliantly! Tomato soup can often be quite boring, but this one definitely was not, and can't wait to make again:)

Made this for lunch and it was quick, easy and delicious. Also made into red pepper and tomato by adding the best part of a jar of roasted red peppers at the end before blitzing which was excellent too. A great standby from store cupboard ingredients.

Fantastic. Used a bit of double cream in the recipe and at the end in stead of Creme freche as had run out. Added 2 red chillies for a bit of heat. Best tomatoe soup I've had.

Delicious recipe and so easy to make. Leave pesto out as son has egg allergy but it says far better than tinned soup.

I'm not a huge fan of tomato soup but this was nice. It makes life so much easier using tinned tomatoes. I used half fat creme fraiche rather than soured cream and good pesto from a jar - it was lovely.

Amazing! My partner and I are both lovers of soup and tomato is one of them! I have never tried my hand at making it from scratch before, so as a starter (for Valentines day), I decided to try it, as it seemed so easy! Wow we loved it!!!!! It is quite similar to the tinned 'Heniz' one, in creaminess, texture and depth but this is even better! Plus no added sugars and rubbish! As someone mentioned, I agree using the sun-blush tomatoes gave this the extra kick and depth! This took me all of 15 minutes and was a delight! I swirled the sour-cream in a heart-shape on top, as a nice touch, being Valentines day! Very filling though, and we had a meal of steak to get through afterwards; so we both couldn't manage desert! I have made this three times now, and will be making it again! Why buy it when it is this cheap and easy to make, and far superior! :D
