  • 6 ripe vine tomatoes, deseeded and chopped
  • 1 small cucumber, diced
  • 1 red onion, very finely chopped
  • 6 tbsp fresh coriander, chopped


  1. Mix together the tomatoes, cucumber, red onion, and chopped coriander, but don’t season until just before serving

Made this last weekend as a starter together with onion bhajis and raita... I added small cubes of carrots, and seasoned with a little salt and some lemon juice... very nice :-)

I found the onion a little strong (the one i used was quite big) but other than that it was lovely and refreshing and so easy to throw together, definately a winner for an event such as a summer bbq. Next time i'm going to try adding fresh lime juice as recommended in some of the other comments.

Added a little olive oil and sherry vinegar.

I have made this salad for years although I add a small dash of oilve oil. Lovely with jacket potatoes.
