  • 1.4l hot vegetable stock
  • 142ml pot single cream
  • 4 rashers streaky bacon, to serve

  1. Melt the butter in a large pan, then fry the bacon and onion, stirring until they start to turn golden. Tip in the leeks and potatoes, stir well, then cover and turn down the heat. Cook gently for 5 mins, shaking the pan every now and then to make sure that the mixture doesn’t catch.

  2. Pour in the stock, season well and bring to the boil. Cover and simmer for 20 mins until the vegetables are soft. Leave to cool for a few mins, then blend in a food processor in batches until smooth. Return to the pan, pour in the cream and stir well. Taste and season if necessary. Serve scattered with tasty crisp bacon and eat with toasted or warm crusty bread on the side.

I love this recipe! I use milk instead of cream and flora rather than butter as a healthier option, and I use normal bacon rather than streaky. I also add garlic- because life without garlic is no life at all. Turns out delicious every time!

Lovely soup, just to runny for me. Will definitely make again, but with less liquid.

This soup is amazing, I made it with smoked streaky bacon for extra flavour and added chorizo to give it a kick like another person had suggested it was lovely with some crusty bread, and I added the cream ....it's a sin not to add it to a soup :)

I have made this several times and its very easy, very tasty & very warming. I don't add cream or the crispy bacon at the end. And its delicious without.

I love this recipe and use it regularly (don't usually bother with the cream though), but discovered today that it's even better when using smoked streaky bacon and half vegetable stock and half chicken stock.

I liked this, and I used the cream, as this was the first time I'd tasted leek and I found the leek very flavoursome... It was very thick and the cream I used actually thinned it out a bit. Perhaps the store bought vegetable broth I used was too overpowering? In any case I think I would even go so far as to water this soup down next time. But it was very tasty. Better too tasty than not tasty enough

This just didn't do it for me. I used my usual trinity of carrot, onion & celery for depth. Used crispy fried smoked bacon in the soup. Just too bland for me. If I make it again, I will add some chilli powder or English mustard to (hopefully give it some oomph.

Getting tons of snow here in Canada, so this soup was perfect for warming everyone up. Easy, quick, healthy and filling. Ingredients are often at hand. A top pick!

I made this tonight with a few tweaks..... as I had no bacon, I added about a 1/4 sausage of spicy chorizo, left out the cream too as was creamy enough when blended. Bloody gorgeous!!!!

Delicious, satisfying soup! Added garlic and a carrot to mine, omitted the cream completely to keep calories down. Gets a 5/5 from me.
