  • 250g pack unsalted butter
  • 1 bay leaf
  • 280g cooked and peeled small brown shrimp
  • ¼ tsp ground mace
  • 2 good pinches cayenne pepper
  • juice ½ lemon

Method

  1. Melt the butter with the bay leaf in a pan or in a bowl in the microwave for 1 min. Add the shrimps, mace, a good pinch of cayenne pepper, the lemon juice and some seasoning. Mix everything together well.

  2. Tip the mixture into a shallow soufflé or gratin dish, or a jar, put the bay leaf on top and sprinkle with a pinch extra cayenne. Chill for at least 2 hrs, or up to 3 days before serving.

I bought 4 pints of cooked shell on brown shrimps from the seafood stall in my local pub car park (traditional London cockney seafood stall selling jellied eels, whelks, cockles, mussels, oysters, prawns and shrimps etc) Peeling those was a labour of love but my mother and I sat down on Christmas eve and did them together and it was actually quite a nice time to have a good old chin wag. Anyway this was great served on Christmas day. We never bother with breakfast and had this at around 11:30/12:00 with the main meal at about 6pm. Was delicious

Amazing on hot toast! I used it as one of three starters on Christmas day and lasts long after. Careful to ensure all shrimp don't sink to the bottom and well mixed in :)

I bought my brown shrimps at Sainsbury's (two packs for £6.00) and this is a really good recipe! My husband loves potted shrimps - a memory from earlier days - and this does not disappoint.
