  • 400g pack mini chicken fillet

  • 4 tsp sherry vinegar
  • 1 tbsp clear honey
  • 1 red chilli, finely chopped
  • 110g bag herb salad
  • 100g feta cheese, crumbled

Method

  1. Heat a griddle pan. Toss the chicken in ½ tbsp of the oil, and season. Cook for 3-4 mins on each side or until cooked through. Pop on a plate to rest.

  2. Next toss the peach slices in ½ tbsp oil and some ground black pepper. Grill on their cut sides for 1-2 mins each side.

  3. Mix the remaining olive oil, vinegar, honey and chilli. Toss with the salad leaves. Arrange the chicken and nectarine slices on top and scatter with the feta. Drizzle with the resting juices from the chicken and eat straight away.

Exceptional recipe! Dished this up at a garden party and it was extremely well received. Spiced it up with a peri peri marinade for the chicken. To the salad I added green beans and tenderstem broccoli. Served alongside a honey mustard vinagerette. Flavours completed each other perfectly. Thank you bbcgoodfood!

I made this at weekend and it was fantastic! Only variation from the recipe was to use nectarines instead of peaches, and rocket baby leaf salad. Served with olive ciabatta on the side. Highly recommended.

This was absolutely delicious, Clean plates from the children too (8&10) who were a little dubious about the fruit and meat combo. Definately one for the staples list.

Absolutely delicious, changed some of the ingredients like red wine vinegar instead of sherry, and iceburg lettuce salad instead of herb. I would use the salad leaf dressing on any salad as I dont generally like dressing, but this was really nice. I would make this again

I wasn't quite sure what to expect from this recipe, but it's absolutely delicious. The flavours all go really well together. I used cider vinegar instead of sherry vinegar and it was fine.

Delicious recipe. Very adaptble too. I used nectarines instead of peaches and added some green beans to the salad - it was lovely!
