  • 4 spring onions, thinly sliced

  • 4 Sun-blush or sundried tomatoes, chopped
  • 2 salmon fillets, approx 140g/5oz each

Method

  1. Put the couscous into a bowl and stir in the stock and oil. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some herbs, add the rest of the ingredients, except the salmon. Season to taste.

  2. Heat oven to 200C/fan 180C/gas 6. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the couscous, top with the remaining herbs and season. Fold the paper over, then twist the edges to seal – like a Cornish pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

This was delicious, and surprisingly very filling. I added fried garlic and mushrooms and served with grilled tomatoes. The tomatoes and mushrooms needed to be used up, I think you could add any leftover vegetables such as courgettes or corn. It was so easy and quick to prepare I will definitely make again.

Really enjoyed this easy-to-make recipe. Ideal for midweek and very little washing up! I used a packet of Sundried Tomato and Garlic couscous and, in addition to the listed ingredients, I used some diced red pepper and a few pine nuts. Will definitely cook again.

This is a good mid-week recipe that I'II definitely be repeating. The salmon came out really nicely cooked. I used plain cous cous, but with more stock that usual, and lemon juice. Also added black olives. I had basil and chives in - think any herbs would work really.

I made a few alterations by using plain couscous made with chicken stock & adding cajun seasoning. But cooking method was kept the same & it's a very quick, easy, healthy dinner.

Love this delicious recipe! I added finely sliced, lightly fried onions and courgettes to the couscous before baking, and that added some heartiness to a light-ish dinner :)

Delicious - have cooked this twice now and both times it has been cleared by myself, my husband, my 3 year old and my 7 month old. I use the Ainsley Harriott packets and just make then up with water as instructed on the packet. I have never had spring onions or sundried tomatoes at home, but I have fried up onion, pepper and mushroom first and added that to the couscous. First time, we just used one packet of couscous and had broccoli on the side as it didn't make much of a meal for my hungry husband, the second time I used two packets which was plenty for the four of us with veg added to the mix. Will definitely be adding to the midweek repertoire!

I cook this in foil for 20 mins and dish up onto plates in the kitchen. Seriously easy but special! I like the suggestion from dal101 to try this with chicken - I can see that becoming a firm favourite.

Really yummy. It took a little longer as I made the couscous myself with chopped garlic, juice of a lemon and some sunflower seeds. I'll add olives next time along with the sundried tomatoes. The children are the lot. I served it with a carrot / beetroot salad in Apple cider vinegar with toasted seeds and sultanas. Delicious.

So far have only made this with chicken but it's become a favourite already. I buy the sundries tomatoes from the pick and mix at the supermarket and add olives any of the marinading oil to the couscous for extra flavour - YUMMY!!!

Lovely recipe - I used Ainsley Harriot's Moroccon couscous which worked really well. I struggled to get the paper to stay in a parcel shape so might use tin foil next time. Will definitely make again!

Thanks. Please let me know what is lemon garlic couscous? I guess prepared mix? Can I make it with addition lemon and garlic with plain couscous?

Hi kolma46 lemon garlic couscous is a prepared mix but you could try adding the grated zest of 1 lemon and a clove of garlic, crushed to 110g plain couscous for a similar result.
