Method

  1. Heat 1 tbsp oil in a pan and gently fry the onion for 5 mins until soft. Add the garlic and cook for 1 min. Add the oats and fry for 2 mins more. Tip into a bowl and set aside to cool.

  2. Add the rest of the ingredients to the cooled mixture and mix well with your hands. Season to taste and shape into 8 patties.

  3. Heat oven to 200C/fan 180C/gas 6. Heat the remaining olive oil in a large, non-stick frying pan and sear the burgers on each side until well coloured (3-4 mins). Transfer to a baking sheet and cook in the oven for 10-15 mins. Serve in rolls with Tangy tomato chutney (see 'goes well with') and cucumber slices.

  4. For the chutney heat 1 tbsp of olive oil in a pan and add 1 finely chopped onion. Cook for 5 mins until softened. Stir in 1 crushed garlic clove and cook for a further min. Add 1 tbsp sundried tomato paste, a 400g can good-quality chopped tomatoes and a pinch of sugar. Gently cook for 20-25 mins until rich and thick. Season to taste, then leave to cool before serving.

Easy to make and delicious. Didn't use apricot as I don't like them but it didn't seem to be a problem. Wasn't sure about the oats but it really works. Liked serving them with the cucumber slices underneath.

These burgers are delish! So tasty! Wasn't sure about adding the oats,carrot & apricot but had them in the cupboard so added them. So glad I did. Made the difference.Great healthy additives! Everyone loved them. Definately make again.

Have tried this recipe before and they were delicious , so moist and light. The second time I didn't have any apricots so grated the same weight of apple and added a small amount of pomegranate mollasses to add the sweetness...even better! I am going to play around with these ingredients ...maybe instead of sausage meat in sausage rolls? Meatballs in a marinara or mushroom sauce?

Really enjoyed these burgers, easy to prepare (don't know what the person who took 2 hours was doing??) We didn't have any apricots so I used sultanas that I whizzed lightly with the hand blender first . The burgers were a great texture, really juicy and flavoursome! The sultanas added a touch of sweetness. A hit with the whole family, will make again.

Fab recipe... Takes a while to prepare but worth it. I left out the apricots as I don't like them but the burgers were still tasty.. They did lack seasoning which I will note next time and add a little salt and black pepper :)

These burgers were very yummy. I added extra garlic and used shallots instead of onions. Also added a dash of Worcester sauce. I will definitely make these again.

The kids and us loved these, didn't fancy the apricots though so left them out!
