  • The base
  • 200g Digestive Biscuits (Chocolate Digestives are best)
  • 100g Butter
  • The Filling
  • 300g Cream Cheese
  • 200g Whipping Cream
  • 200g Toblerone

    Method

    • step 1

      Crush the digestives, and melt the butter in a pan. Once melted, add the digestives to the butter and mix together.
    • step 2

      Place the base mixture in a springform cake tin (approx 8") and press down until firm and even.
    • step 3

      Melt the Toblerone in a bowl over a pot of simmering water.
    • step 4

      Empty the cheese into a large bowl and beat until smooth. Lightly whisk the cream until almost stiff and then add to the cheese.
    • step 5

      Add the melted toblerone to the mixture and mix well (the whole mixture should be light brown).
    • step 6

      Pour the mixture onto the base, smoothing out. Bang the cake tin on a solid surface to ensure the mixture settles.
    • step 7

      Refrigerate for 2-3 hours, then add some small pieces of chocolate to the top to serve.

    It's a lovely cheesecake. I swap digestives for bourbon biscuits for the base.

    Absolutely delicious! My first cheesecake and was super easy. I used a cake pan that was too large (over 9") which meant I needed to use 300g biscuits and 150g butter, which meant that the ratios were a bit off in the end but it's SO tasty!! Definitely making this again!

    I didn't melt the toblerone but instead chopped it quite fine and the texture was amazing!

    Made this cheesecake for fathers day, used an orange flavoured Toblerone. The cheesecake is easy to make and tasty but no one could tell me that it was flavoured with Toblerone, that aside it was a nice flavour, easy to make and clean plates all round. Will definitely make again.

    if u are making it for christmas can u double the base and will it still be fine.

    I’m trying it this evening, currently in the fridge setting. If I think the base needs doubled, I’m just going to go ahead and double it.
