Method

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.

  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.

  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

Really easy to make and tastes great - a perfect midweek meal. I often take the bacon out of the pan once it's fried and re-add it at the end so it stays crispy.

This was yummy! I made two versions- one meat and one vegetarian with Quorn bacon lardons (from the frozen section). I also added some sausages along with the bacon as I had them in the fridge! My partner said it worked out well, and I think the vege version was delicious! I also added two cloves of garlic along with the onions.

Swapped my peas for cabbage while using Chicken stock and is soo yummy! Use this recipe all the time! Quicker than expected, Love it!

Had a few artichoke hearts left in a jar so added those, chopped, along with garlic - really tasty and lower in cals than quite a few other recipes

This risotto is amazing! I used leftover gammon instead of bacon, and added the garlic as suggested by the previous comments. I also added 1 tsp of dried parsley along with the salt and pepper. I will definitely be making this again!
