Ingredients

  • 80g butter
  • 80g soft brown or golden caster sugar
  • 2 tbsp honey
  • 150g rolled oats
  • 80-100g mixed seeds and dried fruit
  • (I use rasins, chopped apricots and sunflower, pumpkin and sesame seeds)
  • 20cm brownie tin

Method

  • STEP 1
    grease and line the tin and preheat oven to 180C/gas 4
  • STEP 2
    melt the butter, sugar and honey in a pan over a low heat until combined
  • STEP 3
    remove from the heat and stir in the oats and seeds/fruit
  • STEP 4
    press into the prepared tin and bake for around 20-25 minutes until golden on top
  • STEP 5
    allow to cool and cut into slices
