Courgette & cauliflower yellow curry

Rinse the rice until the water runs clear (or almost clear).
Transfer the rice to a pan and pour over 300ml water. Bring to just below the boil, then reduce the heat to low so the rice is just simmering. Cover with a lid and cook for 10-12 mins until the rice is cooked through and the water has evaporated. Don't uncover to check until it's had about 8-10 mins otherwise, you’ll lose the steam in the pan. Once cooked, turn off the heat and leave in the pan for 5 mins to continue steaming. Fluff using a fork before serving.
