Chilli chicken fajitas

Method

  1. Heat a couple of tbsp oil in a large pan. Throw in the chicken and quickly brown all over, then add the chilli powder and cook for a minute.
  2. Scoop out the chicken, then add the onion and red pepper to the pan and cook until softened.
  3. Tip in the green beans, tomatoes and the chicken, cover and simmer for 15 minutes.
  4. Stir through the coriander and roll in warm tortillas with a dollop of soured cream.
  5. Serve with green salad.

    Delicious! Our usual recipe is rather dry but the tinned tomatos did the trick. We added mushrooms, a yellow pepper and a small, simple stir-fry veg. packet for extra flavour.

    These were a bit too wet like Beth said but they were tasty i might try thickening them next time and season a bit more! Seemed like it was missing a flavour so will definately experiment with this one as i love to have freshly made food rather than jars feel like im cheating hehe!!

    These are very nice, very tasty. I would have preferred if they were slightly hotter so next time I'm going to use more chilli powder. Also I only used have a tin of chopped tomatoes and they turned out perfect, not too runny.

    Mine weren't too wet, but I used tomatoes in the thick, rich juice rather than the watery juice. These were a huge hit with my kids, which surprised me because I expected them to moan about the grren beans, but they thought the meal was wonderful, so will definitely be doing again.
