  • 1 tbsp sunflower oil
  • 150g Brussels sprouts, fine slice
  • 1 small onion, fine slice
  • 80g smoked bacon lardons
  • 2 garlic cloves, minced
  • 2.5 cm ginger, minced
  • 1/2 tsp each of cumin, coriander, chilli powder
  • 1 cardamom pod
  • 1 tbsp dark soy sauce
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • Sea salt


  1. In a large deep sided frying pan over medium heat, once hot add oil, sprouts, onion and bacon and fry, stirring occasionally for 15 mins. The onion should soften and perhaps colour slightly.

  2. Add the garlic, ginger, cumin, coriander, chilli powder, and cardamom and stir fry for just a minute until everything smells strongly

  3. Throw in the soy, lemon juice, and honey, stir to combine, then add 125ml water and allow to come to a simmer. Simmer for 5 mins, then season to taste.
