Ingredients

For Cake

  • • 200g caster sugar
  • • 200g butter, softened
  • • 4 eggs
  • • 170g self-raising flour
  • • 30g cocoa powder

For Fudge Icing

  • • 200g caster sugar
  • • 200g butter, softened
  • • 4 eggs
  • • 170g self-raising flour
  • • 30g cocoa powder
  • 200ml double cream
  • 50g butter
  • 3 Tbsp honey
  • 200g dark chocolate
  • Shaved chocolate and cherries for decoration

Method

  • STEP 1
    Preheat you oven at 190'C/Gas 5/375f
  • STEP 2
    Line two cake tins with non-stick baking paper.
  • STEP 3
    In a large bowl, beat butter and then add sugar, eggs, flour and cocoa powder and beat to a smooth, soft batter.
  • STEP 4
    Divide batter between two tins, smoothing the mixture out with a spatula. Place cake tins in a prepared oven for 20 minutes or until the inserted skewer comes out clean.
  • STEP 5
    Let the cakes sit for several minutes in the tins before turning them over to cool completely on a wire rack.
  • STEP 6
    To make fudge icing, heat double cream until it begins to bubble. Then add butter, honey and dark chocolate, stirring until the chocolate melts and blends( about five minutes).
  • STEP 7
    Using a palette knive, spread the fudge icing over one of the cool cake layers. Set the second layer on top and repeat, making sure the sides are fully covered. Then decorate with cherries and shaved chocolate. Enjoy!
