Ingredients

Pizza Base

  • 200g Strong Plain Flour
  • 1/2 Sachet of Yeast
  • 150ml Warm Water
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • Extra Flour - For Kneading

Pizza Topping

  • 200g Strong Plain Flour
  • 1/2 Sachet of Yeast
  • 150ml Warm Water
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • Extra Flour - For Kneading
  • 1 Can Chopped Tomatoes
  • 1 tbsp Tomato Puree
  • 1 Green Pepper
  • 1 Green Pepper, Chopped
  • 1 Red Pepper, Chopped
  • 1/2 Red Chili Pepper, Sliced
  • 1 Onion, Diced
  • 3 Chestnut Mushrooms, Chopped
  • A Clove of Garlic, Finely Chopped
  • 1 tsp Oregano
  • A Large Handful of Fresh Basil, Torn Into Pieces
  • Salt and Pepper
  • Grated Mozzarella

Method

  • STEP 1
    Preheat the oven to 210C.
  • STEP 2
    To make the pizza base mix the flour, yeast, warm water, olive oil and salt in a bowl with a knife until a dough is formed. Now spread some flour on the work surface and knead the dough with both hands. To tell when you are done, press down on the dough and it should move back into it's original shape. Roll out the dough with a rolling pin until the base is roughly ½ cm thick. Place the dough on a floured baking tray and leave it there while you prepare the topping. If it does not fit on the baking tray fold up the sides of the pizza.
  • STEP 3
    To make the topping place a frying pan over a lit hob and pour in a splash of oil.When fully heated add the onions and fry them until soft. Add the peppers, mushrooms, garlic, onion and the chili. Leave to fry for another 1-2 minutes. Add the chopped tomatoes, tomato puree, fresh basil, oregano and season to taste. Mix well and add spoonfuls of the topping onto the pizza base leaving roughly 1 inch around the edge. Make sure the topping is evenly spread. Evenly sprinkle the mozzarella over the pizza and place in the oven for 10-15 minutes or until crisp and golden.
  • STEP 4
    At the end grind some black pepper over the top of the pizza. If some topping is left over you can place in a sandwich bag, freeze it and re-heat for another use. It will taste nice as a pasta sauce too!
