Cake batter
- 175g caster sugar
- 175g of softened, unsalted butter/baking butter
- 175g of sieved self raising flour
- 3 medium eggs
- 1/2 a teaspoon of vanilla extract
Buttercream
- 175g caster sugar
- 175g of softened, unsalted butter/baking butter
- 175g of sieved self raising flour
- 3 medium eggs
- 1/2 a teaspoon of vanilla extract
- 300g of sieved icing sugar
- 100g of unsalted butter
- if your buttercream is not mixing, then add a dash of milk
Method
step 1
Preheat the oven to 200C, 180 fan oven and gas mark 6. Line a 12 hole cupcake tin with cupcake cases.step 2
Cream together your butter and sugar until combined.step 3
Add in 1 egg and 1/3 of your flour. Repeat this step until you have no eggs or flour left. Mix until it is all combined.step 4
Put an even amount of mixture into the oven for 20 minutes or until a skewer comes out clean.step 5
While the cakes are cooling, make the buttercream by: mixing together the butter and icing sugar until combined. If it is not mixing well and is going rough, then add a splash of milk.step 6
Pipe/spread your icing across the cakes. Make sure you get an even layer of buttercream.step 7
