This orange cake isn’t like every other. The Orange gives an underlying hint of citrus sweetness yet juxtaposed with the punch of the cinnamon gives a playground of flavours. Due to being partnered with the dates it gives a healthy feeling to help u not feel guilty when devouring this beautiful cake.

Batter ingredients
110g Softened margarine
175g Sifted self raising flour
100g Caster sugar
75g Demerara sugar
1 Grated rind of an orange
5tbsp Milk
2 Eggs
6+ Dates
1-2 tsp Cinnamon
Icing

75g Icing sugar
1 freshly squeezed orange
Method
STEP 1
Mix all batter ingredients, remembering to sift to flour , grate the orange rind and chop the dates into small pieces Remember to preheat the oven to 180 degrees Celsius
STEP 2
Once all batter ingredients are mixed, beat them together until smooth and pour into a greased tin (a loaf tin is preferable)
STEP 3
Bake the cake for 40 minutes at 180degrees Celsius
STEP 4
Once the cake is out of the oven and has cooled, heat the freshly squeezed orange juice and mix with the icing sugar till it is all dissolved.
STEP 5
Once all dissolved, poke a few holes in the cake and pour the icing generously onto the cake allowing it to weep into the holes.
