Method

  • step 1

    Heat the olive oil in a saucepan and tip in the shallots (or onion). Cook gently for 5 mins, then add the garlic cloves and cook for another 2 mins until soft.

  • step 2

    Tip the cannellini beans into the pan and mash roughly, adding a little stock or water to loosen. Stir in the parsley with plenty of seasoning. Great with roast white fish, spicy chorizo and griddled scallops

BEANS WITH OLIVES & FETA

A twist on Greek salad, this can be served hot or at room temperature. Soften grated zest 1 lemon in 2 tbsp olive oil, then tip in 2 x 400g cans drained butter beans, 100g crumbled feta, a handful chopped olives and a pinch dried oregano. Crush roughly and season to taste. Perfect with griddled lamb, crusty bread and houmous.

Really lovely - great instead of mashed potato if you’re following a low carb diet. I added double cream to up the creaminess.

I added lemon zest as well, really lovely. We had it with pan fried duck breast and braised red cabbage.

The addition of a good glug of EV olive oil, or some cream, and a few twist of blacks of the pepper and salt mills really improves the texture and flavour of this mash. I get a really nice texture using a stick blender to mash. And adding 1/2 teaspoon of smoked paprika works wonderfully to lift…

Butterbeans work really well too. It makes a great alternative to mash potato and I've even used mashed butterbeans to top a cottage pie.

This was alright. It needed something more, so I added a bit of lemon juice, and some creme fraiche for texture, but it still wasn't fantastic. Probably won't make again.
