Method

  • step 1

    Heat 1 tbsp of the oil in a deep frying pan over a medium heat. Brown the chicken in batches, setting aside once golden. Fry the onion for 8 minutes until softened. Then add the garlic, chilli and ginger and fry in the other 1 tbsp oil for 1 min. Add the garam masala and fry for 1 min more.

  • step 2

    Stir in the peanut butter, coconut milk and tomatoes, and bring to a simmer. Return the chicken to the pan and add the chopped coriander. Cook for 30 mins until the sauce thickens and the chicken is cooked through.

  • step 3

    Serve with the remaining coriander, roasted peanuts and rice, if you like.

BBC Good Food, you’ve done it again! A large loud banner announces cooking on a low budget and the first ingredient listed is avocado oil, which, at £4.25 for 250ml, even people on a decent budget don’t buy.

Please think about stuff like this and if there’s an expensive ingredient listed, at least offer a suitable alternative. Your editing don’t seem to understand what low budget actually means for many people.

This is a great dish, very quick and easy to prepare. I add peas into it and season to taste. Adding a little squeeze of lime juice at the end really enhances the flavour of the dish along with the coriander and peanuts.

Had to add loads of lemon juice, salt and some sugar but was delicious in the end!
