  • 8 large pork sausages
  • 2 garlic cloves, crushed
  • 400g can chopped tomato


  1. Heat oven to 220C/200C fan/gas 7. Place the onion, courgettes and red pepper in a baking dish, large enough to fit them in a single layer. Drizzle over 2 tbsp of the olive oil and season. Cook in the oven for 20 mins.

  2. Meanwhile, heat the remaining olive oil in a frying pan and cook the sausages for about 5 mins until lightly browned on all sides.

  3. Stir the garlic and chopped tomatoes into the veg, season again, then place the sausages on top and return to the oven to cook for a further 20 mins until the vegetables are tender.

Great basic recipe. I used vegan sausages and added rosemary. It’s very easy to swap other things in and out eg mushrooms, aubergine etc. Served with oven baked sliced potatoes put in the oven at the same time as the veg.

I’ve made this several times now and it’s tasty. I tend to use less courgettes and more peppers but that’s just personal preference. I slice potatoes and bake in the oven separately to go with it as feels like something missing on its own.

Lovely easy recipe. I halved the sausage as it was only a meal for two. This recipe is so adaptable. Will certainly be on my” do again “ list.

A great midweek meal! This recipe is very simple to make, fairly cheap and also tastes great. We will definitely be having this again!

My favourite go to lazy recipe. We also chuck the sausages on top to cook rather than making a faff and cooking in a pan separately.

Delicious and so easy! I added mushrooms as well as some paprika, worcestershire sauce and extra chicken stock to the pan to make a little more "sauce" and it was so tasty! Everyone loved it! Served it with cheesy mash! Lush.

I made this last night and was delicious. I added some cumin and paprika to add to the taste and towards the end I addded a little bit of mozerrella. I served with chunky warm bread. Definitely would recommend.

This is the first recipe that I've actually tried from here...and WOW! I'm very much a beginner cook (as I have been learning to cook before going off to university), and this recipe is so simple that I managed to cook it (and cook it well!) on the first try! Not only is it simple to make, it doesn't take too long, the timings are totally accurate on here, and it tastes simply delicious. I served mine with home-made sweet potato chips, too. The only thing that I would suggest, is to maybe add a little garlic butter to thicken up the sauce, as it gives it some real kick! There is no way that I won't be making this again, it went down well with the whole family! 5 Stars from me for one of my new favourite dishes!

This is lovely for an easy mid week meal. I bought sausages wrapped in bacon which was a tasty addition. I also added a chopped leek. I served it with cheesy mash and kale.

Just made this and it was delicious i wrapped the sausages in smoked streaky bacon and served it with pasta and it went down a treat with my two very fussy little uns

I seasoned the roasting veg with celery salt and added oregano with the tomato sauce. Since my 5-year old doesn't eat 'spicy' but I do, I also added a little dried, crushed chilli to mine at the table. Very easy and tasty meal with minimal washing up, ticks all the boxes for me :)
