  • 1 large or 2 small boneless, skinless chicken thigh fillets, cut into chunks
  • 2 tsp curry paste (choose your favourite)
  • a third of a mug basmati rice
  • two-thirds of a mug chicken stock
  • 1 mug frozen mixed vegetables

Method

  1. Heat the oil in a frying pan, then fry the onion for 5-6 mins until softened. Add the chicken pieces, fry for a further couple of mins just to colour the outside, then stir in curry paste and rice. Cook for another min.

  2. Pour in the chicken stock and throw in any larger bits of frozen veg. Bring to the boil, lower the heat, then cover the pan with a lid. Cook for 10 mins, then stir in the remaining veg. Scatter over the spinach, cover, then cook for 10 mins more until all the stock is absorbed and the rice is tender. Give everything a good stir, season to taste, then tuck in.

It was stunning! I used 4 tbs basmati rice, about 200 ml stock, yellow curry paste and fresh vegetables. Will definitely make it again!

Loved this! Quick and easy. Made it with madras paste and I used fresh veg - broccoli, red pepper, peas, courgette plus the frozen spinach. Didn't have fresh coriander so added dried with the stock. Took a tip from someone else's comment to add lemon juice at the end which really perked it up. It serves far more than one person, this was enough for two plus leftovers.

I cooked this today for the wife and I. The fact it's Loaded with vegetables, Chicken and Rice makes it a very filling dish. It was easy to make, tasty and makes enough for two days worth of meals - well, it will did for us.

We really enjoyed this recipe. I used fresh veg rather than frozen but will consider frozen next time for a cheaper option. I will cook again, healthy, low fat, easy, packed with veg - what is not to like ! I did add some coriander to serve and made a dip of sour cream, coriander and lemon and I think that jazzed it up. I didn't have issues with sticking, I cooked in a non stick frying pan with a lid. Just off to have some leftovers for my lunch !

Absolutely one of my favourite recipes ever! Ridiculously easy and quick to make even if I'm home late on a weeknight. Can't wait to cook it at a dinner party too. Love how flexible it is cooking for one person or ten people. I use frozen peas, frozen spinach, and Ocado frozen roasted med veg. Amazing!

Did not enjoy this at all. As mentioned by others the rice stuck to the bottom of the casserole dish. Tasted awful. Made loads and it's all going in the bin. Would be better off with a ready made curry from M&S.

Very good recipe. To avoid the rice sticking, turn the heat OFF after 10mins cooking the rice and allowed it to sit for 20 minutes. The rest of the liquid will still absorb but should not stick to the pan.
