  • 4 tbsp lemon curd
  • 200g tub Greek yogurt
  • 250g tub virtually fat-free fromage frais
  • 400g strawberries, hulled



    Once available in Britain for just a brief period during the summer, strawberries are now a year…

  • 8 shortbread rounds, roughly crumbled


  1. Mix together the lemon curd, yogurt and fromage frais. Roughly mash the strawberries, then gently stir them through the lemon mixture.

  2. Drop half the shortbread into 4 glasses and top with half the fruit yogurt. Sprinkle over the remaining shortbread and finish with the rest of the fruit yogurt.

Lovely tangy dessert, the lemon curd really made it very tasty.

I did this with raspberries instead and it was a nice, tasty & light pudding - no guilt there at all!

This was very easy and very popular with all the family but we all felt it could have done with more of a strawberry flavour and another time I would use more strawberries and just chop the extra and fold them in as well to see if that helps. Still very good though, and wonderfully simple.
