  1. Heat oven to 200C/180C fan/gas 6. Carefully lift the skin on the chicken thighs and spread the soft cheese between the skin and flesh. Sit the chicken in a roasting tin, skin-side up, and surround with the potatoes and halved tomatoes, cut-side up.

  2. Scatter the tomatoes with the garlic and a light sprinkling of sugar (this helps to bring out their natural sweetness). Scatter the thyme leaves and sprigs over the tin, season and drizzle with oil. Roast for 45 mins until the chicken and potatoes are cooked through with crisp, golden skin.

Fabulous dish really tasty and easy to make, I am going to try Stilton next time instead of garlic & herb cheese.

1st time pots were a little hard, so I cut them into smaller pieces. also added different veg to add variety : squash, perrers, mushrooms. but the star was the cheesy chicken, I uses phille with vampires here ! fantastic dish

I cooked the chicken a while longer.My daughter in law wont eat chicken when its juicy,she says its not cooked through.otherwise very nice,i would cook it again.very tasty.

I was a little disappointed with this. Definitely very easy but unfortunately not very cheesy and really lacked that little something. My new potatoes were hard too! Next time I would use baby new pots or blanch them first. I would also maybe add some chorizo to spice it up a bit.

Evelyn Bell 31 March 2010 I made this bake twice. First time the potatoes were hard when everthing else was cooked next time I blanched the potatoes. Result perfect.

Easy, very little washing up and yummy! Couldn't ask for anymore!!
