  1. Heat the oil in a large pan and add the peppers, onion and potatoes. Cook, stirring regularly for 5-8 mins until golden. Then add the paprika, garlic, thyme and tomatoes. Bring to the boil, stir and cover, then turn down heat and simmer for 12 mins. Add a splash of water if the sauce becomes too thick.

  2. Season the stew and lay the salmon on top, skin side down. Place the lid back on and simmer for another 8 mins until the salmon is cooked through. Scatter with parsley, if you like, and serve.

Very nice. I removed the skin from the salmon & cut the salmon into large chunks & added some prawns & mussels. I also increased the amount of smoked paprika to 3tsp & added plenty of freshly ground black pepper & sea salt. Will be a favourite.

Great quick & easy meal. I didn't have parsley to garnish so used fresh coriander which was loved. Also used tinned new pots.

This was delicious. I par boiled my quite big new potato quarters for ten mins first then followed the rest of the recipe. All the family thought it extremely tasty!

I have just made this for dinner ,really tasty. Listened to other member comments and parboiled the potatoes , also added some chorizo for extra flavour . Agree that the smoked paprika is essential . Will definitely make again .

I always find recipes which include potatoes in some kind of sauce don't give them enough time to cook - so I generally parboil them first, which I did in this case and it worked. The tomato taste was too overpowering, and the whole dish was edible but uninspiring.

Very nice dish, I found the thyme too strong, would halve the amount next time. Needs a good amount of seasoning also, would definitely make again.

I added mushrooms too, but left out the peppers as the kids do not like them. I sliced the potatoes and they cooked fine. Lovely flavour.

Added mushrooms along with peppers, potatoes etc. I halved the recipe but still added 400g chopped tomatoes, but thought they were a bit overpowering Next time I will try 200g tomatoes and 200ml stock. Very good - but could be even better! Certainly very easy.

Delicious recipe, though cooked the onions, peppers and potatoes for a bit longer than the recipe stated, so maybe that was why our potatoes weren't uncooked! Added a splash of Chipotle paste and some red wine to give it a bit more flavour. Not sure the Thyme added much.... might try the suggestion below with some chorizo. Very easy way to cook a fish dish!
