  • 568ml pot double cream
  • 250g tub mascarpone
  • 75ml marsala
  • 5 tbsp golden caster sugar
  • 300ml strong coffee, made with 2 tbsp coffee granules and 300ml boiling water
  • 175g pack sponge finger
  • 25g chunk dark chocolate
  • 2 tsp cocoa powder


  1. Put the cream, mascarpone, Marsala and sugar in a large bowl. Whisk until the cream and mascarpone have completely combined and have the consistency of thickly whipped cream.

  2. Get your serving dish ready. Put the coffee into a shallow dish and dip in a few sponge fingers at a time, turning for a few secs until they are nicely soaked, but not soggy. Layer these into your dish until you have used half the biscuits, then spread over half of the creamy mixture. Using the coarse side of the grater, grate over most of the chocolate. Then repeat the layers (you should use up all the coffee), finishing with the creamy layer.

  3. Cover and chill for a few hrs or overnight. This can now be kept in the fridge for up to 2 days. To serve, dust with cocoa powder and grate over the remainder of the chocolate.

SUPER easy... SUPER delicious... everyone said it was awesome !! I used Bailey's instead of Marsala ... Kahlua would be even better I'm sure... Couldn't be any easier.. no need for fuss !! Tastes JUST as good as the difficult recipes

Made this for a BBQ today and it was amazing. Bought 2 Madiera cakes from Tesco and cut them Into wedges. Poured the coffee over the top. And used 75ml of Ameretti instead of masala in the cream. Will be making again next week for a gathering and probably many more times! :)

Hi this recipe is not ok if you have an egg allergy the sponge fingers are made with egg. I find it very hard to find recipes that are egg free.

Hi, my husband is allergic to eggs and I too find it very difficult to find deserts to cater for him. Mary Berry does a fabulous Lemon & Lime Cheesecake which is egg free and he loves. Apart from that I cook him a lot 'crumble' recipes. If you have any deserts you can share, please do. Many thanks

I made this for a dinner party last year and it has been requested again so I have just made it again. It is better made the day before and left in the fridge. I buy a basic Madeira cake and slice it instead of sponge fingers and Disaronno works just as well as Marsala. Very fattening but a really impressive but easy dessert.

I was inspired to make this after the GBBO. Big mistake! I ended up with a large bowl of cream and a few soggy biscuits. The ratio just doesn't work. Hardly any taste and no texture. A heart attack on a plate.
