Traditional South African pudding boiled in cinnamon syrup, as introduced to us by Ron and Juliana van der Merwe

  • For the syrup
  • 2 1/2 - 3 cups water
  • 1 - 1 1/4 cup sugar
  • 1 tsp fine cinnamon
  • 1 tbsp lemon juice
  • For the batter
  • 1/2 cup apricot jam
  • 2 tsp bicarbonate of soda
  • 1/2 cup butter
  • 1 1/2 cup flour
  • 1 tsp salt


    1. Start with the syrup, mix the ingredients for the syrup and bring to a boil.
    2. Now start with the batter. Mix the apricot jam, bicarbonate of soda and butter in a thick base pot till the butter has melted.
    3. Add the dry ingredients and mix well.
    4. Add spoonfulls of batter to the boiling syrup. The bicarbonate of soda will cause a effervescent effect.
    5. Put a lid on and boil for not more than 10 minutes.
    6. Serve with custard
