  • 4 slices sourdough bread or ciabatta

Method

  1. Mix the beetroot, apple, onion, lemon juice, oil, cumin and coriander together, season well, then set aside while you cook the mackerel. Heat the grill to high. Put the fish onto a sheet of foil on the grill rack, sprinkle over the curry powder, drizzle with oil, then season and rub well into the fish.

  2. Grill for 4-5 mins until the skin is crisp and the fillets are cooked through; you won’t need to turn the fish over. Toast the bread in a toaster or alongside the fish under the grill, then drizzle with a little olive oil. Top with the salsa and mackerel, then pour over any pan juices and eat straight away.

A delicious and healthy lunch. Pleased that 6 and 9 year olds enjoyed the mackerel, although they had apple in place of salsa!

I am not a great fish lover but this was delicious, made is as part of the new BBC Healthy Eating plan today for lunch. I did not have apples so I used a pear - would definatley make again.

I have prepared the recipe as part of the new year healthy plan and it is delicious. I have prepared it for a packaged meal so I packed the salad individually in a container overnight and the onions and apple got sort of marinated. I used canned mackerel drained with multi grain bread and left out the curry since we already had curry last night. Overall very tasteful I will make it again.

Wouldn't have thought of beetroot salsa, but it makes a yummy base for this.I used a tinned mackerel fillet instead of fresh (as I hadn't read the recipe through and the intro implies it's made with tinned fish) and used the oil from the tin on the toast. Really delicious, filling lunch - I will be making this again.

This recipe was suggested by BBC Good Food as part of their new year healthy diet plan and I have to say it tastes delicious. The simplicity of the dish makes the eating all the more enjoyable.

What is fantastic about this recipe is the combination in the beetroot salsa. Make it to have with absolutely anything - make any excuse to eat it, because it's just gorgeous.

After reading the reviews I hoped this dish would reconcile me with mackrel....it didn't, I'm afraid. I wasn't able to follow the recipe exactly, so maybe that had something to do with it, but I really didn't enjoy the fish. The salsa is truly amazing, however!

All of these sound lovely, just one problem for me though, I am allergic to fish of all kinds. Not a faddy thing where I don't like fish cos I do like fish, it doe's not like me ! Can you suggest an alternative for me to use instead of fish please
