  • 125g ball mozzarella, torn into small pieces

  • 1 tbsp wholegrain mustard
  • 4 skinless boneless chicken breast fillets
  • 8 smoked streaky bacon rashers


  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

I followed the Boursin suggestion because I imagine it melts to more of a sauce compared to mozzarella. I kept all other ingredients the same and it was a huuuuge success. As a vegetarian i'm always unsure about what meat recipes will work but this one had my boyfriend literally licking his plate clean and he's the type that needs a knife and fork to eat a pizza (ridiculous french 'table manners')

Loved it! So filling. The recipe is easy to change aswell. My partner doesnt like cheese so I added breadcrumbs with chorizo and lime instead of the cheese and he loved it!

Really tasty and very simple to make. Took longer than 25 mins to cook though, more like 40 mins until the cooked was completely cooked through. Will defo make again :o)

I have made this a few times now - always turns out to be extremely tasty. I usually add extra bacon to make sure each chicken breast is fully wrapped in bacon, and i add more filling too. Definitely a firm favourite in our house!

This recipe was really easy to make. I love cheese and mustard so it was perfect for me. I used Boursin instead of the recommended Mozzarella as so many reviews had suggested it. My boyfriend was extremely impressed with the dish. I served with green beans and mashed potato. The chicken was very moist as well.
