A cross between a trifle and tiramisu, this really is simple to do. You could use fresh raspberries to make it a quick no-cook dish

  • 85g golden caster sugar
  • 2 x 250g tubs mascarpone
  • 500g tub vanilla custard
  • 140g amaretti biscuit
  • about 50g/2oz grated dark chocolate

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the apricots into a roasting tin, toss with the orange zest, juice and sugar and roast for 15-20 mins until soft. Remove the skins if you like. Tip into a bowl to cool.

  2. Whisk the mascarpone and custard together until completely blended.

  3. Tip the biscuits into a large glass bowl, then top with the apricots and custard. Scatter generously with the grated chocolate, then cover and chill until ready to serve.

Oh so delicious! Could not get mascarpone so just did usual custard topped with whipped cream. A really different taste.

Made this with apricots and it was lovely,it was in the fridge for a couple of days,and the more chilled it got,the better it tasted,will def be making again

This was a huge success at my sister's birthday bbq. I made it with 'boozy strawberries' (strawberries in wine and a little sugar) and topped it with milk chocolate shavings. Yum! Plus the mascarpone and custard are a lovely combination. I've been enlisted to make it again for 3 more bbqs!

made this with 1/2 strawberries and 1/2 raspberries instead of apricots for a friend's BBQ. NB they only need a couple of mins to soften in oven. decorated with grated milk and white chocolate instead of plain. V easy to make

Made this using frozen raspberries instead of apricots - it was demolished within minutes. Everyone was very impressed and loved the flavour given by the amaretti biscuits and the raspberry juice. Will definitely be making again, a very easy recipe

Made it with the raspberries for a no cook desert and it was demolished within a few mins!!!! Will def make again.

This was sooooo easy to make and utterly sublime. Flavours worked beautifully. Next time will reduce the sugar or replace with honey. It was a little too sweet for my tastes but my guests loved it.
