Method

  1. Prepare couscous with chicken stock, according to the packet instructions. Heat olive oil in a pan and cook the onion for 2-3 mins until softened.

  2. Toss in chicken breast fillets and stir fry for 5-6 mins until tender. Add the blanched almonds and, when golden, stir in the hot curry paste and cook for 1 min more.

  3. Add the couscous along with the apricots and the coriander. Toss until hot then serve with plain yogurt if you like.

Simple to make but disappointing really. Used flaked almonds instead of whole ones so maybe lost some "crunch" with them but I'd expected these nice ingredients to be tastier and not so dry...

I'd give this 5 stars if I could work out how to on this iPad! Very easy and the children liked it, good for using up left over roast chicken.

This has become a regular family recipe that we all love. So easy to make and really delicious. I like to use whole chicken breasts and served on top of a large bowl of the cous cous mixed with the sauce - looks fabulous and colourful in the middle of the table!

This is quite tasty - I love the mix of the heat of the curry paste and the sweetness of the apricot and the crunchiness of nuts. Unfortunately my fiancee did not like it much though..so probably won't be making it again!

could you serve the chicken and couscous separatley and maybe put some chicken stock or yogurt in chicken mixture to make it less dry?

Really nice,my partner loved it! I used chicken thigh fillets instead of breast (cheaper and still yummy!) and added some chilli powder and cayenne pepper for extra kick.

Delicious. Made this last night and followed all the advice of the other reviewers about using madras curry paste, adding in raisins or sultanas and also needing to add some water when mixing with the couscous. Served with a simple salad. Will make again !
