One pan roast chicken

Ingredients
- 4 chicken thighs skinned
- 4 chicken drumsticks skinned
- 1 small butternut squash deseeded skin left on, sliced
- 1 red pepper cut into 8 pieces
- 1 orange pepper cut into 8 pieces
- 2 red onions each cut into 6 wedges
- 2 courgettes cut into 2cm rounds
- 3tsp Jerk seasoning
- 1 garlic bulb cloves separated left unpeeled
- 250ml chicken stock
- Fry light
- Fresh coriander to garnish
Method
- STEP 1Preheat oven to 200c or gas mark 6
- STEP 2Slash each chicken piece and add to a bowl with butternut squash, peppers, red onions and courgettes.
- STEP 3Add jerk seasoning and mix throughly
- STEP 4Transfer chicken and veg to roasting tin add garlic cloves and stock
- STEP 5Spray with fry light
- STEP 6Roast in oven for 40-50 minutes turning chicken once
- STEP 7Garnish with coriander leaves
