  • 200ml medium white wine

  1. Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.

  2. Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.

  3. While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.

This is a tasty, quick and easy pasta that went down well with everyone. I made it without the parmesan, so it wasn't as nice as it could have been. But for a no-fuss-to-make dish, it is one of my favourites!

Cooked this the other day and absolutely loved it! Like others, I added some paprika and chilli flakes, but other than that kept everything the same. Gorgeous! Have cooked the sauce on its own and frozen in batches to use as a pasta sauce when I fancy it. Give it a try :)

This was okay - it almost tasted like a base sauce. I think, as others have said, if I were to make it again, I would add some chilli and, perhaps, some fennel and I would use red wine instead of white, as it was a bit acidic (although that may have been the wine I used!). My kids loved it though.

This was a really nice recipe. Used 6 sausages and a chorizo, also added some peppers, a chilli and some fresh tomatoes as needed using up. The sauce was delicious, will definately make again.

Absolutely delicious. We did, however, double the sausages and halve the pasta. This is a keeper.

I use red wine with this as I find it's a lot less acidic than using white wine. All the family enjoy this and it's very easy and quick to do.

Pretty easy and cheap, I reckon I could even make this at a festival with some simplicity tweaks. However, really could be so much better!

Definite favourite! I like to add onion, chilli and mushrooms to bulk it up. I find a full pack of 6 sausages is better and that does enough for two with some left over for lunch the next day. My OH thinks it tastes even better the next day!
