Ingredients

  • Oil 3tbsp 5p
  • Onion 12p
  • Carrot 8p
  • Celery stick 12p
  • Can of tomatoes 31p
  • Red lentils 125g 21p
  • Rice 200g 30p

Method

  • STEP 1
    Heat oil in a medium saucepan and cook onion covered on a medium low heat until the onion is soft
  • STEP 2
    Add remaining ingredients except for the lentils and 1.5 cups water. Simmer until the veg is tender about 45mins
  • STEP 3
    Add lentils and simmer for a further 10 minutes or until lentils are just cooked through but not mushy. Taste and serve with steamed rice
