Ingredients

  • Oil 3tbsp 5p
  • Onion 12p
  • Carrot 8p
  • Celery stick 12p
  • Can of tomatoes 31p
  • Red lentils 125g 21p
  • Rice 200g 30p

Method

    1. Heat oil in a medium saucepan and cook onion covered on a medium low heat until the onion is soft
    2. Add remaining ingredients except for the lentils and 1.5 cups water. Simmer until the veg is tender about 45mins
    3. Add lentils and simmer for a further 10 minutes or until lentils are just cooked through but not mushy. Taste and serve with steamed rice
