Ingredients
- Oil 3tbsp 5p
- Onion 12p
- Carrot 8p
- Celery stick 12p
- Can of tomatoes 31p
- Red lentils 125g 21p
- Rice 200g 30p
Method
- STEP 1Heat oil in a medium saucepan and cook onion covered on a medium low heat until the onion is soft
- STEP 2Add remaining ingredients except for the lentils and 1.5 cups water. Simmer until the veg is tender about 45mins
- STEP 3Add lentils and simmer for a further 10 minutes or until lentils are just cooked through but not mushy. Taste and serve with steamed rice
