Method

  1. Mix together the mustard, oil, garlic, rosemary leaves, vinegar and a little black pepper. Tip into a large food bag then add the pork chops. Rub together, seal and marinate for 3 hrs.

  2. Drain the chops of their marinade. This can then be squeezed out of the bag and mixed with a little cold water until runny. To cook on a griddle: heat the griddle pan until a good heat rises and cook for 10 mins, turning once or twice. As they cook, brush occasionally with the marinade juices. Remove from the heat and season with salt. To help the meat relax a little, leave it loosely covered in foil for about 10 mins.

I replaced the mild mustard for a mixture of 1 tablespoon Dijon mustard and 1 tablespoon whole grain mustard. I also sprinkled the chops with a little bit of muscovado sugar while in the griddle to slightly caramelise them. I buy pork chops regularly now thanks to this recipe.

Nice enough but a little bland. It has the advantage of being super quick but it needs to be jazzed up if it's to earn 5 stars. As it is, I'm giving it 3.

Bit miffed that the 3hrs marination isn't included in the prep time! Would have loved to try this but it's too late to cook this for dinner tonight :-(

Quick and easy to make. I used the excess marinade juices for peppers,tomatoes and mushroom as well.. Very delicious!!!

These are absolutely delicious, I've made them several times now and they always turn out beautifully. A perfect accompaniment is stuffed baked apples (core apples and stuff with sausage meat, then bake in the oven on 180C [fan] for 25 minutes.) A firm favourite in our household.

Good, easy recipe. Just had these for lunch and the flavour was great and the chops not at all dry or tough. Marinated them overnight and had them with mash and veg. Will definitely make again.

Not normally a lover of pork chops as they can be dry but this was perfect, tasty and succulent. Is on my favourites list

Gorgeous! After id taken out the meat, I added some water to the food bag and then poured it over mangetout, mushrooms, cherry toms and the pork to cook on the griddle and then lay the pork on a bed of spinach, rocket and ruby chard. Beautiful, quick and easy. Perfect for a quick meal after work without feeling like you're roughing it :) I will make this again

There are so many recipes on this site that don't include marinading things or extra steps that are vital in the prep time! Very annoying! Please amend, if possible.
