Ingredients

  • 500 grams of mushrooms, chopped finely
  • 3 large cloves of garlic, crushed
  • 200 grams of St Agur blue cheese
  • 3 tablespoons of thick Creme Fraiche (Insigny sur Mere)
  • salt and pepper to taste
  • 50 grams of salted butter

Method

  • STEP 1
    warm a saucepan on a medium heat
  • STEP 2
    add the butter and wait until it foams but not browns
  • STEP 3
    add the chopped mushrooms and stir fry for 2 minutes
  • STEP 4
    add the chopped garlic to the pan and cook for a further 2 minutes
  • STEP 5
    add the St Agur and creme fraiche and stir in until the cheese melts
  • STEP 6
    add salt and pepper to taste
