Method

  1. Heat oven to 180C/160C fan/gas 4. In a large bowl mix the self-raising flour, baking powder, cinnamon, wholemeal flour and golden caster sugar.

  2. In another bowl, mix the eggs, semi-skimmed milk and sunflower oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.

  3. Divide the mix between 12 muffin cases and bake for 25 mins. Cool on a wire rack, then pack in a container for lunch.

I believe that apple pips do contain cyanide! Perhaps a warning may be in order as I have seen some chop the apple and put all in to food blenders, juicers etc..

left out wholemeal flour (hadn't got ) and added half tspn nutmeg. They turned out great & tasted great. jan

I'm on the hunt for tasty low fat options. These are delicious. I adapted the recipe slightly using mainly wholemeal flour and adding 1 extra apple and about 25ml milk which meant they were moist and fluffy. Great breakfast on the go which keeps you going.

I adapted this recipe to make some low calorie breakfast muffins. I soaked the raisins to add a bit more moisture after reading the other feedback. you can see them at http://riversidebaking.wordpress.com/2012/10/19/apple-glut-muffins/

Perfect as a breakfast muffin - left the apple coursely grated so it was lovely and moist. Added extra cinnamon too, which adds a bit more sweetness.

Good flavour but a bit dry. Needs adjustment to make it worthwhile, possible more apple to make it a bit more moist.

I used sweetened soy instead of milk but kept everything as per recipe. Really tasty, and quite a good size muffin. My children loved them.
