  • 12 mini cocktail sausages
  • tomato ketchup, to serve

Method

  1. Preheat oven to fan 180C/conventional 200C/gas 6. Put a generous half-teaspoonful of sunflower oil in the bottom of each cup of a deep 12-hole mini muffin pan set on a baking tray.

  2. Pour the milk into a jug, add the egg, flour and a pinch of salt and whisk everything together with a hand blender or wire whisk until a smooth batter forms.

  3. Put the muffin pan in the oven for a minute or so until the oil is very hot. Carefully remove from the oven and quickly fill the cups just under two-thirds full (this may not seem enough batter, but they puff up in the oven). Drop a sausage into each cup and bake for 20-25 minutes until golden brown, well risen and crisp. Serve with ketchup.

Yummy!! I made these for a party with some pease pudding to serve and they dissappeared very quickly!! I did some with veggies sausages too. I could only get six toads out of the quantities given though and I have made them several times now.

Next time, when I am making it, I will use the given quantity to make 6 cups, and also will sprinkle a little grated cheese on top.

Nice & crispy, but the batter didn't fill 12 cups, it just filled 8. Other than that, it was delicious, my 2 year old daughter and my 12 year old son enjoyed it very well. Thank you!

Made this for 2 fussy children with poor appetites and got 2 clean plates! Substituted the muffin tray for traditional yorkshire pudding tins and popped 3 sausages in each. Makes 4-5. Brill.
