Method

  1. Scrub the sweet potatoes and prick all over with a fork. Place on a microwaveable plate and cook on High for 18-20 mins, or until tender. Split in half and place each one, cut-side up, on a serving plate.

  2. Flake the drained tuna with a fork and divide between the sweet potatoes. Top with the red onion and chilli, then squeeze over the lime juice. Top with a dollop of yogurt and scatter over the coriander, to serve.

A great simple quick stand by recipe. Won't blow you away but sometimes you get the craving for this kind of thing and it hits the spot. My 11 year old can make this for himself and often does, enjoying having control sometimes. He often adds black olives

Delicious recipe! Used sour cream and chives instead of the Greek yoghurt and coriander, it went down a treat as a starter!

My partner LOVES this! I just microwave the potatoes until cooked and bung all the ingredients on top. I love the lime, chilli and sweetness of the potato. Defiantly a staple mid week dinner :)

I can't eat yoghurt unfortunately, so I used this recipe as a base rather than follow it to the letter. I mixed the tuna with chopped up onions, capers, olives, coriander, chopped red chilli, a little lime juice and some celery. After cooking the sweet potatoes, I scooped out some of the flesh and mixed it into the tuna mixture with a little olive oil and seasoning, then piled all of it back into the sweet potatoes. I then topped those with cheddar cheese and popped them back in the oven to melt and crisp up. Served with salad. Really filling and tasty!

This wasn't for us. Liked the sweet potato and tuna, but the rest was too rich and tangy, nice to try something new, but unfortunately won't be having it again.

Be careful about 18-20 min, in microoven - mine got burnt after 15, I should have watched it! I'll try one more with around 8 min :)

I cooked the potatoes for 18 minutes as it said to do, however this was way too long. They came out so over-cooked that I could not cut into them. They were too tuff to eat. Just ended up eating the tuna and the salad I also made, but felt the lime juice was very over powering. Would maybe try again, but use less lime and cook for less.

So easy. The sweetness of the potatoes really complimented the chillies and the lime to give a Mexican flavour. I fried the chillies and onion for about three minutes in some oil just to soften them a bit. I also added the lime juice to the pan just before topping the potato to meld the flavours a bit more.
