Sweet Potato Stew

Ingredients
- 1 tbsp olive oil
- 1 tsp cumin
- 1 onion
- 1 tin of chopped tomatoes
- 400ml chicken stock
- 3 cloves of garlic
- 1 pepper (any colour)
- Handful of mushrooms
- 1 courgette
- Handful of sugar snap peas / mange tout
- 1 tin of chick peas
- 2 red chillies (optional)
- 400g chicken breast
- 4 small / 2 large sweet potatoes (chopped)
- 1 small tin of sweetcorn
- Handful of spinach
- Handful of coriander
Method
- STEP 1Heat oil and spices in a pan. Add onions and cook for a couple of minutes.
- STEP 2Add chopped tomatoes and chicken stock and bring to the boil.
- STEP 3Add all veg (except spinach) and season well.
- STEP 4Bring to the boil and simmer for 30 mins.
- STEP 5Check potatoes are nice and soft. Slightly crush potatoes whilst in pot.
- STEP 6Add spinach and coriander and leave for another 5 minutes.
