Ingredients

  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 onion
  • 1 tin of chopped tomatoes
  • 400ml chicken stock
  • 3 cloves of garlic
  • 1 pepper (any colour)
  • Handful of mushrooms
  • 1 courgette
  • Handful of sugar snap peas / mange tout
  • 1 tin of chick peas
  • 2 red chillies (optional)
  • 400g chicken breast
  • 4 small / 2 large sweet potatoes (chopped)
  • 1 small tin of sweetcorn
  • Handful of spinach
  • Handful of coriander

Method

  • STEP 1
    Heat oil and spices in a pan. Add onions and cook for a couple of minutes.
  • STEP 2
    Add chopped tomatoes and chicken stock and bring to the boil.
  • STEP 3
    Add all veg (except spinach) and season well.
  • STEP 4
    Bring to the boil and simmer for 30 mins.
  • STEP 5
    Check potatoes are nice and soft. Slightly crush potatoes whilst in pot.
  • STEP 6
    Add spinach and coriander and leave for another 5 minutes.
