  • 85g low-fat biscuit (we used WeightWatchers ginger biscuits)
  • 200g tub extra-light soft cheese
  • 200g tub 0% fat Greek yogurt
  • 4 tbsp caster sugar
  • few drops vanilla extract
  • 2 tbsp good-quality strawberry jam
  • 100g strawberry, hulled and sliced



    Once available in Britain for just a brief period during the summer, strawberries are now a year…


  1. Put the biscuits in a plastic bag and bash with a rolling pin until you have chunky crumbs. Divide between 4 glasses or small bowls.

  2. Beat the soft cheese, yogurt, sugar and vanilla together until smooth, then spoon over the crumbs and chill until you are ready to serve.

  3. Stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and serve.

Totally delicious desert. I mixed the cheese/yoghurt with a little bit of strawberry syrup and whished that together. This desert will certainly be prepared more often.

Gorgeous! I have tried all sorts of fruit and top quality jams. My particular fave is Maman Apricot jam. it has whole fruit is totally delicious. Experiment !!

You'd never tell this was a low fat recipe, it was absolutely gorgeous! So easy to make too, easily put together before dinner for a quick pudding. I may also serve it in smaller portions for small appetites though, it was a generous helping each!

Quick, easy and low fat - what more do you want? I used Weightwatchers ginger and lemon cookies, and replaced the strawberries with some fresh rhubarb cooked with a little ginger, and replaced the vanilla with a drop of limoncello - perfect!

Can you assemble the crumb base and cheese mixture and chill over night? Advice wanted!

THink i chilled too long as when i came to eat biscuits were soggy. Think next time i'll do all in one and serve. Jam made it a little sickly. Quick and easy to do but think i'll go for a full fat cheescake next time lol. 4 out of 6 wernt keen
